At Zagler, bread is given as much time as it needs. We don't rush, we allow ourselves the luxury of treating the dough with minimal use of baking agents but with a great deal of knowledge and patience.

To preserve and develop the life in the grain, our doughs rest for a day at a controlled temperature. We rely on new technologies to maintain the flavour and long shelf life and to adapt the profession of baker to our world.

We consciously and appreciatively value a FOOD product, preferring the grain from the neighbouring field, which costs more because it is worth more to us.
